Popup Cafe is open every day in the High Street. They are firm believers in the importance of food; as part of people's health and happiness as well as it's much wider impact on communities and the environment.  

Here is their tasty and versatile recipe for a carrot, sesame, hazelnut & orange slaw

Makes: 10 servings

This delicious salad makes a super tasty and relatively simple addition to a BBQ. A great combination of flavours. It shows how learning to make a dressing can elevate vegetables much like the way a sauce brings a steak to life. If you are missing one ingredient you can substitute for something similar; be creative. This is just a template - very much inspired by a Jamie Oliver recipe.

Ingredients

1kg Carrot
1 bunch Coriander
300g Toasted hazelnuts
3 tbps Toasted sesame seeds

 

Dressing

A dash Olive oil
1 Oranges (zest and juice) & 3 Lemons (zest and juice)
A squeeze honey
To taste salt
Half the sesame seeds from above

Method
1. Peel and grate the carrots (you can julienne (thin slice) them if you prefer)
2. Toast the sesame seeds in a medium heat, dry frying pan. Keep them moving and watch and smell for when they start to toast (use your nose)
3. Toast the hazelnuts separately using the same method - you may wish to use them whole or break them down a little smaller, use a pestle and mortar or knife
4. Add the half the toasted whole sesame seeds and hazelnuts to the carrots

Dressing

5. Zest and juice the lemons and oranges
6. Pound the other half of the sesame seeds in a pestle and mortar
7. Mix with the honey, oil and salt - you need to mix it really well, we put our dressing in an empty jam jar, pop the lid on and shake like crazy

Serving

8. When ready to eat, mix in the coriander and dressing just before serving.

Ideas

Try poppy seeds instead of sesame seeds
Add dried fruit like cranberries or raisins for more sweetness
Add lime instead of lemon for more zing
You could use walnuts instead of hazelnuts
