Here is their delicious recipe for an aubergine parmigiana - baked fried aubergine slices layered with tomato sauce and melted mozzarella

Two large aubergines
two tins of toms for the sauce
an onion
olive oil
approx 250 - 300 g mozzarella (two bags)

Begin by salting the sliced aubergine in a shallow dish, with a little water too.
Dry them off then fry gently on each side and set aside.

Make a basic tomato sauce with by gently frying some chopped onions, garlic and basil with chopped tomatoes (if you’re using tinned toms, blitz first in a food processor) then season to taste

In an ovenproof dish, layer the aubergine then tomato sauce and mozzarella until you run out

Wrap in foil and bake for 40mins, for the last ten, take off the foil, serve with bread – deliziosa!
